Servings: 1 Jar

Ingredients

  • 4 large ripe tomatoes roughly chopped
  • 1 small red onion roughly chopped
  • 1 jalapeño pepper seeds removed and roughly chopped (adjust to your preferred level of spiciness)
  • 1/2 cup chopped fresh cilantro
  • 2 cloves garlic minced
  • Juice of 1 lime
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  • Place the roughly chopped tomatoes, red onion, jalapeño pepper, cilantro, and minced garlic into a food processor or blender.
  • Add the lime juice, ground cumin, salt, and pepper to the processor or blender.
  • Pulse or blend the ingredients until you achieve your desired consistency. For a smoother salsa, blend for a longer time; for a chunkier texture, blend briefly.
  • Taste and adjust the seasonings as needed.
  • Transfer the salsa to a bowl, cover with plastic wrap, and refrigerate for at least 30 minutes to let the flavors meld.

Notes

  • I like using fresh garden or famers market veggies but store veggies work too!
